I have been having a hard time getting myself and my food together lately. I wake up in the morning and just can't get myself to scramble another egg or fry any more bacon. And it's not just that I'm sick of eggs (or that I'm sick of bacon-- at all!). I can't get myself to cook anything. I've thought about salmon patties and even craved them. But when I think about what I need to do to make them I give up and decide to drink tea instead. I'm just low on energy. What makes it worse is that I'm eating like crap on the weekends. I have to hope that if that stops so will this lethargy. So today I want to nip this in the bud. I'm going to pre-make breakfasts. I'm going to make
egg cupcakes (and hope that they're better than the ones I made while we were on South Beach), and
salmon patties, and prep a
breakfast squash. I'm also going to keep some other options in mind:
frittata,
apple muffins, an apple cut up and palced in the microwave for 2 minutes with ground cinnamon, leftover steak thinly sliced and tossed with scrambled eggs and salsa, butternut squash pancakes, coconut pancakes, and almond flour pancakes (

Anyway, maybe if I can get breakfast back under wraps maybe the rest of the day will go better. More energy, more accomplished, better workouts, less stress. That's my hope.
